A delicious, supremely healthy meal doesn’t have to be time consuming, and doesn’t have to be bland. Many people who don’t consider themselves kitchen saavy think that easy meal preparation has to come in the form of pasta and canned sauce, or frozen entrees. Folks, this just isn’t the case. All you have to have is a little imagination. Read more »
So I love lasagna. But I don’t eat cow’s milk (except for mild amounts of organic butter), and I don’t eat wheat…..so ordering it at a restaurant is not an option. Making it at home however, turned out to be a delicious science experiment!
Now I’m sure I’m not the first to think of the idea of a goat cheese and eggplant lasagna, but I didn’t use a recipe, so that means I invented this one.
Here’s what you’ll need to fill a 9 x 13 inch baking dish….

This is where a can of black beans hiding in your pantry can come in quite handy. All out of fresh veggies again, it’s time to get the creative juices flowing for a home cooked meal. If you’re like me and my taco-crazed boyfriend, then it might be wise to keep some organic taco shells on hand. And yes….ORGANIC. Otherwise it’s highly likely you’re eating genetically modified corn, and if you’ve seen my favorite documentary, “The Future of Food” you’ll know just how important this little...
There’s really nothing easier to throw together than soup, and it can provide one of the best opportunities to get a variety of foods and nutrients into one meal. I throw all the vegetables I get weary have been sitting around for too long into one big pot and let it simmer for a while. I start by sauteeing a chopped onion in the soup pot, then add other chopped veggies, broth, spices of choice, a hardy helping of salt and let her go for a half hour or so on a low simmer.
As I’ve mentioned before I like to hide nutrition in some common foods. One of my favorite snacks is a chopped apple with peanut butter. Ever since I was a kid back in the Jiff or Peter Pan days, this has been a snack-time favorite. Well, I’ve upgraded to better quality these days, and often turn this sweet snack into a quick breakfast. First of all, if you’re going to top this peanut butter (or whichever nut butter you choose) on an apple, make sure it’s all organic. Apples are one of the top foods laden with pesticides,...
This is a great fall back when you know you have to have dessert even if it means a midnight run to the deli for a sleeve of Chips Ahoy. It’s also fun to modify and mix and match ingredients to serve as a method of satisfying your sweet tooth without sabotaging your healthy ways, and sneaking in some vitamins while you’re at it.
The base? A banana. Ripe bananas are plenty sweet to not need sweetening on top of them. While yes, they’re high in sugar, starchy, and maybe a little higher glycemic than I’d prefer…you’re...
We’ve all been there: Open the fridge, stare, close the fridge. Walk over to a pantry: open, stare, close. Pretend like something spontaneously appeared in the fridge while you weren’t looking…and repeat the process. Before calling it a night and hitting the peanut butter jar with a spoon make sure you’re prepared with some staples in the back of your freezer for that rainy day. Read more »
So I woke up at 8 this morning. Then I woke up again at 10:30. It wasn’t even a late night last night, but maybe the weeks leading up to my board exam this past Thursday got to me. And celebrating the board exam being over on Thursday night may have had something to do with it. So after searching for a quick “go-to” breakfast for over an hour, it was on to Operation: Clean Out Pantry. With not much left from our Trader Joe’s mission 2 weeks ago, I was left with few options. There were 4 eggs. I wanted something...
