    So Ameesh and I are taking off for a mid week getaway to Atlantic City tonight.  I needed food to pack for lunch at work today, and wanted to get rid of some veggies in the fridge before heading out.  The ingredients didn’t sound too appetizing on their own: raw sugar snap peas, half of a large cucumber, kidney beans.  Yum, right?  Needing to think of something quick and creative, I fried up the kidney beans in some grape seed oil.  I trimmed the very sweet snap peas, opting to keep them raw because they’ve got such a great sweet...

    Today is the one year anniversary of the Healthy and Happy blog.  I encourage new readers to go back to the early months and read a few entries, or for those who’ve been with me since the beginning, maybe get a little inspiration refresher!

    In honor of the anniversary, I’m going to answer a question for a friend.  Her health issue is the turning point in my life that got me interested in nutrition and health about 6 years ago, so I thought it would be appropriate to talk about.

    This news almost made one of my good friends cry.  If you think that putting blueberries in your yogurt or cereal was a healthful addition, you unfortunately aren’t doing yourself much good.  Blueberries are one of the known “superfoods” meaning they have nutrition that goes above and beyond the call of duty.  They are antioxidant superstars (the nutrients that fight free radicals that cause aging).  Especially because they are in season, they are even more healhtful right now, so eat them up.  Just don’t go mixing...

    Had a scrumdidlyumptious breakfast this morning, without the nauseating effect of a real IHOP breakfast.  I usually have a box of gluten-free banana waffles in the freezer for those wanna-feel-like-a-kid-again breakfast cravings.  Actually, I didn’t really have any other breakfast options, anyways, so I didn’t feel too bad concocting my waffly good meal.   Read more »

    Another beef recall from out west…again with antibiotic resistant salmonella.  I told you to go see Food Inc.  I wasn’t kidding.  Go see it now.  They really make it clear how it’s so easy for meat to become contaminated like this.  Wow, vegetarianism is looking better and better.  But I do love a good buffalo...
